Terroir
Tavel township Vineyard surface : 100 hectares Maximum yield: 44 hl/ha.
Grapes varieties
Black Grenache (50%, which brings high aromatic potential and softness) – Cinsault (15%, giving fineness and delicacy) – Syrah, Mourvèdre, Carignans (20%, give colour, fullness and body). Clairette (8%, with its floral aromas) – Picpoul and Bourboulenc (7%, that reinforce flower aromas and give liveliness).
Winemaking
Tavel is a rose wine which follows a winemaking closely related to a red winemaking: with long macerations from 48 to 72 hours. After pressing, 10 to 15 days fermentation is led at low temperatures (13°-14°). Tavel is issued from a blend of free-run juice, which carries aromas, fruits, freshness and acidity, and of first-press juice which protects structure, richness and spices. This skillful blend gives rise to Tavel wine, «1st Rosé of France».
Tasting notes
Eye: bright rosé wine – ruby red colour with topaz tints. Aromas: complex – red and white fruits combined. Mouth: dry and full-body, spicy – good persistency.
Ageing Potential
Thanks to the press wine, our Tavel can age between 3 or 5 years. But, first of all, this is a Rosé wine which fully expresses itself when young
