Winemaking
The grape are harvested when perfectly ripe and then destemmed. Maceration lasts 18-20 days with a careful extraction of the aromatic and polyphenolic elements (pumping-over and hand-plunging). When malolactic fermentation is complete, the wines are racked and left to mature in stainless steel in order to maintain freshness and fruit.
Tasting notes
Rich nose with cherry and spices notes. Mouth is typical of the appellation with complex aromas. Intense and long finale that reflects the “Garrigue Gardoise” aromas. To drink at around 18°C.
Ageing Potential
To drink now or can be kept from 5 to 10 years.
