Winemaking

The plots were selected for their low yield and high aromatic potential. A precise follow-up of their maturity was carried out by the technical team (analyses of the follow-up of the maturation, weekly tastings of the berries) for a harvest at the optimal moment.

Vinification of a part of the parcels in small stainless steel tanks (5 tons/30hl each)

Traditional vinification, punching down of the cap 2 to 3 times a day for an optimal extraction of aromas and tannins, hot post-fermentation maceration for 15 days. Racking and blending after malolactic fermentation.

Wine not filtered.

Tasting notes

Shiny robe with violet reflections.

Intense nose, beautiful expression of Syrah with blackcurrant, black berries and small black fruits notes .

On the palate we find coffee and spicy notes which reinforce the black fruits aromas of the nose.

The tannins are melted, round and a beautiful acidity announces a good aging capacity.
