Granite, fluvio-glacial alluvium and terraces of Rhône rolled pebbles or loess. Continental climate with a Mediterranean influence.
Strict selection of the harvest according to origin and maturity, the grapes are completely de-stemmed. Cold pre-fermentation maceration, vatting with gentle extraction methods. Entonnage after malolactic fermentation.
Colour : Very deep Aromas : Very expressive on the nose, with red and black fruits and spices (notably fine peppery notes), which bring complexity and elegance to the whole. Palate : The attack is very smooth and gives way to an assertive tannic structure that accompanies the wine over its length. Finishes with spices and subtle ageing notes. FOOD AND WINE PAIRING Grilled red meats, rib of beef, rack of lamb, duck breast. It is also suitable with meats in sauce, Bourguignon, stew and game, saddle of hare, ribs of marcassin, rabbit stew and spicy cheeses. Serve between 16 - 18°C. Uncork preferably 1 hour before serving.
